Watermelon and Mint Gazpacho

INGREDIENTS

2 cups – Fresh Watermelon Juice
2 Teaspoon Red Wine Vinegar
2 Tsp – Extra- virgin Olive Oil
1 no – Green Chilli
30 gms – Mint
Salt and Pepper – To Taste
Ice as required
Mint Sprigs—to garnish

INSTRUCTIONS

1. In a blender add, chilli, and watermelon.
2. Pour in the red wine vinegar and olive oil and blend. You may add some ice.
3. Add the mint and season with salt and pepper. Blend until smooth.
4. Pour into chilled glasses and serve with mint sprigs.
