Sarson ka Saag Recipe

INGREDIENTS

For Sarson ka Saag:
1 bunch mustard leaves (Sarson)
½ bunch bathua leaves
½ bunch spinach leaves
1 cup chopped tender radish leaves
2-3 inches white radish root
1 cup fenugreek leaves, chopped
2 medium sized onions, chopped
2 medium sized tomatoes, chopped
2-inch ginger, chopped
2 green chilies, chopped
7-8 garlic cloves, chopped
½ tsp Catch red chili powder
1-2 pinches of Catch hing/asafoetida
2-3 cups water
2 tbsp maize flour
Catch salt, as required

Tempering for Sarson ka Saag:
1 medium sized onion, finely chopped
1-2 tbsp oil
3 bowls of cooked saag

Accompaniments with Sarson ka Saag:

  • Makki ki roti
  • Onions
  • Green Chilies

INSTRUCTIONS

Making Sarson ka Saag:

  1. Clean and chop all the greens.
  1. In a pressure cooker or pan, add all the ingredients, including Catch salt, Catch red chili powder, Catch hing but not the maize flour.
  1. Cover the pressure cooker and cook for 5-7 minutes.
  1. Pour the greens along with the stock and maize flour in the blender.
  1. Blend till smooth.
  1. In another pan, pour the blended mixture.
  1. Simmer for at least 30 minutes.

Tempering for Sarson ka Saag:

  1. In another small pan, heat ghee or oil.
  1. Add the chopped onions and fry them till light brown.
  1. Add the prepared saag. Stir and simmer for a few minutes.
  1. Stir occasionally.
  1. Serve it hot with onions, green chilies a dollop of butter and makki ki roti.

Recipe Notes/Suggestions:

  • Alter the seasoning as per your taste.
