Roasted Chicken Recipe

INGREDIENTS 1 whole chicken 2-3 tsp of Catch black pepper powder 1 large bunch of fresh thyme 1 lemon, halved 2 garlic cloves, minced 2 tbsp butter, melted 1 large onion, thickly sliced 4 carrots, chopped 1 tsp Catch red chili powder ¾ tsp Catch Salt 1 bulb of fennel, tops removed, and cut into wedges 3 tbsp olive oil Accompaniments with Roasted Chicken:

  • Salad
  • Mashed Potato
  • French Fries


  1. Pre-heat oven.
  2. Remove the chicken giblets. Rinse the chicken inside out. Remove any excess fat and pat the outside dry. Liberally apply Catch salt and Catch Black pepper powder to the inside of the chicken.
  3. Stuff the cavity with the bunch of thyme, both halves of the lemon and all the garlic. Brush the outside of the chicken with the butter and sprinkle again with Catch salt and Catch black pepper powder.
  4. Place the onions, carrots and fennel in a roasting pan.
  5. Toss with Catch salt and Catch black pepper powder, thyme and olive oil. Spread around the bottom of the roasting pan and place the chicken on top.
  6. Roast the chicken till it reaches the right temperature and is completely cooked, this should be about 1 hour. The juices should run clear when you cut between a leg and thigh.
  7. Remove the chicken and vegetables to a platter and cover with aluminum foil for about 20 minutes.
  8. Slice the chicken onto a platter and serve it with the sides.
