Mutton Korma Recipe

INGREDIENTS

500 grams chopped mutton

Catch table salt, as required

1 tsp. Catch turmeric powder
3 tsp. lime juice
3 garlic cloves
½ tsp. cumin seeds
½ bay leaf
2 tsp. sunflower oil
¾ cup beaten yogurt
½ tsp. Catch red chili powder
½ inch ginger
1 chopped onion
¼ inch cinnamon
4 green cardamoms
½ tsp. coriander leaves (for garnishing)

Accompaniments with Mutton Korma:

  • Rice
  • Roti/Naan

INSTRUCTIONS

  1. Wash and drain the mutton pieces under cold running water.
  2. Add the mutton pieces to a deep pan with ½-1 cup of water and little Catch table salt. Bring to boil and reduce the flame.
  3. Simmer until the meat is 70% cooked and once it is done, turn off the flame. Take a pan and dry roast the ingredients including Catch turmeric powder and Catch red chili powder for a few minutes.
  4. Transfer the roasted masalas to a mixer-grinder and grind to a fine paste.
  5. Heat oil in a heavy-bottomed pan over medium flame.
  6. Add the ground masala paste and stir fry with a little water.
  7. Add the cooked mutton pieces in the pan and stir fry until well coated.
  8. Add Catch table salt and mix well. Now add the curd and water.
  9. Reduce the flame and cover the pan with a lid. Add some Catch black pepper powder, to make the curry spicier.
  10. Allow the curry to simmer for 30 minutes or more, till the meat is tender.
  11. Turn off the heat and garnish with coriander leaves and lime juice.
