Mushroom Masala Recipe

INGREDIENTS (1 cup = 240ml) 1 ½ cup mushrooms sliced ¾ cup onions cubed ½ cup tomatoes chopped ½ inch garlic 2 garlic cloves 6-8 almonds/cashews 1.5 tbsp oil 1 bay leaf 2 green cardamoms 1 cinnamon stick ½ - ¾ tsp Catch red chili powder ½ - ¾ tsp Catch garam masala powder ½- ¾ tsp Catch coriander powder ¼ tsp Catch kasuri methi Salt, as required Accompaniments with Mushroom Masala:

  • Flavoured Rice
  • Roti/Naan
  • Sliced onions

1) Blanch onions and cool them. Add them to a blender with tomatoes, cashews or almonds, ginger and garlic. 2) Make a fine paste and set aside. 3) Heat oil in a pan and sauté bay leaf, cinnamon and cardamom. 4) Pour the onion-tomato purée and cook until the mixture thickens. 5) Add Catch red chilli powder, Catch coriander powder and Catch garam masala powder. Sauté on a low heat until the mixture leaves the sides of the pan. 6) Add mushrooms and salt. Sauté for 2-3 minutes. 7) Pour water as needed and cook until the mushrooms turn tender. Bring the gravy to a desired consistency by adding more water if required. 8) Sprinkle Catch kasuri methi. Cover with a lid and turn off the flame. 9) Serve hot. Recipe Notes/ Suggestions:

  • You can also add a few tbsp of cream and coriander leaves on top.
  • You can adjust the spiciness as per your requirement.
