Mexican Rice Recipe

INGREDIENTS

1 ½ cup-soaked rice
2 large tomatoes
2 tbsp olive oil
1 medium red capsicum
2 medium carrots, thickly grated
2-3 whole dry red chilies
6 garlic cloves
1 large onion
2 ½ cup vegetable stock
Salt, to taste
1 tsp Catch black pepper powder

Accompaniments with Mexican Rice: 

  • Salsa
  • Ketchup

INSTRUCTIONS

  1. Heat 1 tbsp olive oil in a pan. Add red capsicum, dry red chilies, tomatoes and garlic cloves. Sauté on a high flame till slightly charred.
  2. Cool and grind to a smooth paste. Heat the remaining olive oil in another pan, add onion and sauté till golden brown. Add rice and sauté.
  3. Add the ground paste, vegetable stock, salt and Catch black pepper powder. Mix well. Add carrots and mix. Cook till done. Serve hot.

Recipe Notes/Suggestions:

  • You can also add Catch chaat masala for an added desi twist to the Mexican Rice.
  • Adjust the spices as per your taste.
