Gobhi Adraki

INGREDIENTS

500 gms Cauliflower florets
100 ml Refined Oil
1 Tsp Cumin seeds
2 Nos Red chilli whole
2 pinch Asafoetida
3 Nos.Green chilli, chopped
1 Tbsp Ginger, chopped
100 gms Onions, chopped
100 gms Tomatoes, chopped-optional
1 Tsp Turmeric powder
1Tsp Coriander powder
¼ Tsp Dry Ginger powder
To taste Salt
¼ Tsp Garam masala
3 Tbsp Coriander, chopped
2 Tbsp Lemon juice
Garnish-
5 gms Ginger juliennes
1 Coriander sprig

INSTRUCTIONS

Keep cut cauliflower florets in water.
Heat oil in a wok and add cumin and red chilli whole. When it crackles add asafoetida, green chilli and ginger.
Sauté for a minute and add onions and cook till onions are about to get golden brown.
Add spices, ginger powder and cauliflower florets; mix well and cook covered with a lid for 5 minutes on slow fire. Open lid and add tomatoes and mix.
Finish with garam masala and chopped coriander.
Transfer to a serving bowl and garnish with ginger juliennes and coriander sprig.
