Gatte Ki Sabzi Recipe

INGREDIENTS For making gatte: 2 cups besan 1 pinch Catch asafoetida ¼ tsp. Catch turmeric powder ½ tsp. Catch red chili powder ½ tsp. carom seeds 1 tsp. Catch coriander powder 1 tsp. Catch table salt 3 tbsp. oil 2 tbsp. curd 4-5 tbsp. Water 4 cups water for cooking gatte 1 tsp. cumin seeds For making the gravy: 1 tbsp. ghee 1 tbsp. oil 5 guntur chilies ½ tsp. cumin 1 onion finely chopped 8-10 cloves 1-piece cassia 5-6 garlic cloves ½ tsp. Catch turmeric powder ¾ tsp. Catch red chili powder ½ tsp. Catch coriander powder ¼ tsp. Catch asafoetida Catch table salt, as required 1 green chili slit A few coriander leaves Accompaniments with Gatte Ki Sabzi:

  • Rice
  • Roti/Naan

Preparing the Gatte:

  1. Dry roast the cumin seeds and then grind them.
  2. In a bowl, mix the besan, spices including Catch table salt, Catch turmeric powder, Catch red chili powder, Catch asafoetida, and the cumin seeds, to make the mixture of the gatte.
  3. Add ginger and mint leaves to this mixture.
  4. Add about 1 ½ tbsp. of curd to this.
  5. Start to knead this like a dough. Add more curd if this is too dry.
  6. Add a few drops of oil.
  7. Divide and roll the dough into thin strips
  8. Boil the strips in some water in a pan.
  9. Now cut the strips into smaller pieces and deep fry them.
  10. Once they are golden brown, take them out and now prepare the gravy.
Preparing the gravy:
  1. In a pan, add 1 tbsp. oil in which the gatte were fried. Add to that 1 tbsp ghee.
  2. Add the chilies and cumin seeds to the oil and let it turn brownish.
  3. Now add the onions and sauté.
  4. Add the cloves, cassia and garlic. Mix well.
  5. Add the powdered spices like Catch turmeric powder, Catch coriander powder, Catch asafoetida and Catch red chili powder.
  6. Roast the spices and add a pinch of Catch table salt.
  7. Add some water, to deglaze the pan and lift the spices.
  8. Now use the curd that was left earlier from the gatte and add it to this masala. Add it little by little.
  9. Add a green chili.
  10. Mix all the curd with the masalas.
  11. Once you see the oil coming up to the surface add the gattas.
  12. Mix well. Add the coriander leaves.
  13. Let it simmer for 5-7 minutes for the flavours to concentrate.
  14. Serve hot.
