Eggplant Parmesan Recipe

INGREDIENTS 3 eggplants peeled and thinly sliced 2 eggs, beaten 4 cups Italian seasoned bread crumbs 6 cups spaghetti sauce, divided 1 pack mozzarella cheese, shredded and divided ½ cup grated Parmesan cheese, divided ½ tsp dried basil Catch salt, as required Catch black pepper powder, as required Accompaniments with Eggplant Parmesan:

  • Salad
  • Garlic Bread
  • Soups


  1. Pre-heat the oven to 175 degrees C.
  1. Dip eggplant slices in egg, then in bread crumbs. Add Catch salt, as required. Place in a single layer on a baking sheet. Bake in pre-heated oven for 5 minutes on each side.
  1. In a 9x13 inch baking dish, spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce.
  1. Sprinkle with mozzarella cheese and parmesan cheese.
  2. Repeat with the rest of the ingredients, ending with the cheese.
  1. Sprinkle Catch black pepper powder and dried basil.
  1. Bake in preheated oven for 35 minutes, or until golden brown.
Recipe Notes/Suggestions:
  • Alter the seasoning as per your taste.
  • Aluminum foil can be used to keep the food moist and cook it evenly.
