Egg Biryani Recipe

INGREDIENTS 3 tbsp oil 1 ½ cups basmati rice 1 ½ tsp ginger garlic paste ½ cubed capsicum or 1 large potato cubed (optional) 1 large onion thinly sliced 2 green chilies, sliced 4 – 5 boiled eggs 1 medium tomato, chopped 1/8 tsp Catch turmeric powder ½ tsp Catch red chili powder 1 – 1 ½ tsp Catch Biryani Masala powder Handful of mint and coriander leaves, chopped 3 tbsp yogurt 2 ½ cups water Spices: 1 star anise 1 bay leaf ½ tsp cumin seeds 4 green cardamoms 4-5 cloves 1-inch cinnamon stick Accompaniments with Egg Biryani:

  • Onion Raita
  • Mint Raita
  • Papad

Preparation for Egg Biryani: 1) Soak the rice for at least 20-30 minutes. Drain water and set the rice aside in a colander. 2) Boil eggs, remove the shells and wash them. Make few gashes with a fork and set aside. 3) Heat a pressure cooker or pot with oil. Add capsicums, if using and fry on high for 2-3 minutes. Set aside. How to make Egg Biryani: 1) Add star anise, cumin seeds, bay leaf, cardamoms, cinnamon stick in the heating oil. Allow them to sizzle. 2) Add onions and fry them till they turn golden brown. 3) Add ginger garlic paste. Fry till the raw smell wears off. 4) Add tomatoes, mint, Catch red chili powder, Catch turmeric powder, salt and yogurt. Cook until the tomatoes turn mushy. 5) Add eggs, potatoes (if using) and Catch biryani masala powder. Fry till the mixture thickens. 6) Pour water and add salt as needed. Taste to check if salt and spices are alright. Bring it to a boil. 7) Add rice and capsicums. Cook rice in open pan till very little water is left. 8) Lower the flame, cover and cook till the rice if fully done. 9) Fluff up the biryani and serve with raita. Recipe Notes/ Suggestions:

  • This biryani can be prepared in a pot or even in a pressure cooker.
  • If using a pressure cooker, close the cooker and cook on a low flame for 5 minutes. Switch off before it whistles to prevent it from becoming mushy. Set this aside, don’t leave it on the hot burner.
  • Potatoes and capsicums add extra flavor to this biryani.
