Broccoli Soup Recipe

INGREDIENTS 4 tbsp butter 750 gms broccoli 1 large onion, chopped 1 stalk celery, chopped 3 cups chicken broth/ vegetable broth 3 tbsp all-purpose flour ½ cup cream Catch black pepper powder, to taste Accompaniments with Broccoli Soup:

  • Eggs
  • Salad
  • Sandwich


  1. Melt 4 tbsp butter in a saucepan over medium-high heat. Add broccoli, onion, carrot, salt and Catch black pepper powder and sauté until onion is translucent. Add the flour and cook for 1 minute, until the flour reaches a blonde colour. Add stock and bring to boil.
  1. Simmer uncovered until broccoli is tender, for about 15 minutes. Pour in the cream. With an immersion blender, puree the soup.
  1. Add salt and Catch black pepper powder, to taste and then replace the lid back on the pot.
  1. Serve hot.
